Freshly caught fish is processed within the shortest possible time using the latest technologies. Waterjet cutting is a fundamental pillar of the system concept. In a highly automated process, the fish is scanned to define the cut contours and then portioned with the water jet within fractions of a second.
In addition to the waterjet cutting itself, X-ray and laser technology and specially adapted software are applied. This guarantees not only the required production speed but also the optimum utilisation of the material to be cut. Resources are thus sustainably conserved and the yield maximized.
Marel uses the advantages of waterjet cutting to portion the fish without using mechanical knives. The waterjet as such only comes into contact with the product once during a very short moment.
Since the waterjet does not represent a mechanical cutting blade that comes into contact with the fish repeatedly, cross-contamination during waterjet cutting is generally avoided. Maximum yields are permanently and reliably achieved by waterjet cutting of fish.
